BBQ Pork Chops with Sauteed Apples

Tonight I am trying a new recipe: Barbequed Pork Chops with Sauteed Apples from pg. 186 of The Best of Cooking Light (2004). The recipe doesn't advertise how long it will take to prepare, but I would estimate 5 minutes for the BBQ sauce, 2 minutes for the rub, and 10 minutes for the apples (assuming you have a handy coring and peeling contraption). As for cooking, the chops go on the grill for 6 minutes per side and the apples should take about 7 minutes total. I am whipping up some Mac & Cheese too! It's not as homemade as the first two items, but it will LOOK homemade! It will take about 20 minutes to prep and an additional 5-10 minutes in the oven for a crispy, melty look. I would like to do a veggie with this combo in the future. (We had Brian's Super Chili yesterday, so I'm all beaned out.) Any ideas? Spinach? Broccoli?

Everything turned out tasty! The pork had a bit too much crushed red pepper in the recipe, so I would definitely cut that in half next time. The need for a green color was quite evident by the end of cooking! Those granny smiths weren't so granny smith by the time I'd finished frying them in 3tbs of butter and coating them in brown sugar and cinnamon! The pork was cooked through after only 12 minutes on the grill, which we were thrilled with! When eating the meal, we found that it was best to combine a bite of apples with a piece of pork. It was a great mix of sweet and spicy.
